David Foulquier
David Foulquier is an American restaurateur and chef based in Miami. He is the founder of Fooq's, a French/Persian/American fusion restaurant located in Miami. David was chosen to the Forbes 30 Under 30 list in 2018 for the Food & Drink category. [1]
Biography
David grew up in New York City and is of French and Persian descent. [1] His mother fled Tehran after the 1979 revolution while his father hails from Paris. After graduating from the Dalton School, he attended the University of Miami where he studied international relations for two and a half years. Realizing geopolitics was not for him, David transferred to Florida International University in School of Hospitality & Tourism Management.
After college, Foulquier worked in the kitchens of now-defunct Miami establishments such as OTC and Gigi.
In early 2015, he opened Fooq's, an endeavor he saw as part of the "local, grassroots approach" of newer spots in downtown, such as the hip bar the Corner and the café All Day.
He sees his fusion of French, Persian, and American cuisine as a way to bring together the city's diverse community.
In early 2018, he plans on opening Sushi Noz, an 8-seat hinoki wood omakase counter on New York City’s Upper East Side.
He credits his staff, patrons, fiancée, and family for the restaurant's success.
